This example falls under one of my proposed definitions: "There are no principles that are binding to everyone or in all contexts."
There are, as you observe, an infinite number of possible exceptions to rules. However, the fact of infinite exceptions can be subsumed under one definition loosely described as "there are always exceptions to rules" or, as I phrased it above, "no principle is binding in all contexts."
That's only one possible definition of moral relativism. What else do people mean when they refer to "moral relativism"?
