As for the Hungarian dances, they are showpieces for the piano and a lot of fun. But it's open to question how Hungarian they really are, even though Liszt himself was born in Hungary. You might compare these dances with the Hungarian music of Bela Bartok, who actually went out into the Hungarian countryside with a phonograph recorder to record folk melodies. (I have never heard that Liszt went into the countryside to transcribe folk tunes.)
Since I'm not familiar with the other pieces you mentioned, I'll let others write about them.
