The legend goes that one day Scarlatti's cat walked across his keyboard and struck an unusual series of notes. Domenico wrote them down and used them for the subject of his fugue K. 30. Whether or not it's true, it's a fun little story. Another fugue with a strange subject is K. 58 in C minor. Here, Scarlatti uses half a descending chromatic scale, and some interesting effects are generated from it near the end (cascading chromaticism, cool!). Scarlatti's fugue K. 417 has a more normal theme, but halfway through it he starts using thematic material twice as fast, with 16th notes all over the place.
I can't think of any other fugues by Scarlatti at the moment. I hope this gives you a good start.
