If you just want to know what's out there, there's Ave Verum Corpus by Mozart, a lovely little motet Amadeus tossed off while he worked on the Requiem. Beethoven's Missa Solemnis is magnificent, as are the Berlioz and Verdi Requiems. The three Mes and Te Deum by Anton Bruckner are also beautiful and magnificent, although I should warn you that his E minor M has no strings attached. And if you're up for an intense evening, try Gustav Mahler's hour-and-a-half long Symphony #8, for double chorus, eight vocal soloists, and expanded orchestra including organ and antiphonal br. And when you're done with these, there are always Handel's Messiah and Bach's B minor M.

Some modern composers of choral music are John Rutter, Maurice Durufle, Henryk Gorecki, and Arvo Part.
