It depends on what you know of Debussy's music. I suppose you've heard Prelude a l'Apres-Midi d'un Faune, La Mer, and the Nocturnes; don't miss the Images for Orchestra or the Danses Sacree et Profane for harp and strings.
You'll probably also like Ravel (he wrote a lot more than the Bolero!), Tchaikovsky, and Mussorgsky. If you're really adventurous, try Stravinsky's Firebird, Petrouchka, or The Rite of Spring.
As for earlier music, no one should stay unfamiliar with Bach, Mozart or Beethoven. Bach's best-known works are the Brandenburg Concertos, the B Minor M, the Toccata and Fugue in D minor for organ, and the Pacaglia and Fugue in C minor for organ. Anything by Mozart is worth hearing. For Beethoven, the great works are the symphonies, the piano concertos and piano sonatas (all 32 of them), the violin concerto, and the last five string quartets; but any of his chamber music or solo piano music is wonderful.
